Grass fed Highland beef is lean, low in cholesterol, high in nutritional value, tender and delicious. 

Highland cows are slow growers, taking nearly twice as long to mature as most other breeds of cattle.  During this growth, the minerals and nutrients which they eat from our lush pastures have time to sink deep into their muscles.  This provides a beautiful color and delicious flavor along with the high nutritional benefits of essential minerals and Omega-3 fatty acids.  The majestic coats on Highlands benefit them and their beef by naturally keeping them warmer, making them need a thinner layer of subcutaneous fat, eventually affecting their beef to be lower in cholesterol.
